Motivation?

It is simply amazing how much one can get done when one is procrastinating writing her paper on motivation.

Huh. Sounds funny.

Anyway, visiting one of my favorite blogs, "Kitchen
Meets Girl"(http://kitchenmeetsgirl.com) and decided to try her Orange Cranberry Bread.

One word.

de-LISH.

  •  2 cups flour 
  •  1  cup sugar
  •  2 teaspoons baking powder
  •  1/2 teaspoon salt
  •  1 teaspoon finely shredded orange peel
  •  2 eggs
  •  1/2 cup milk
  •  1/2 cup plain Greek yogurt, mixed with 2 Tbsp. honey
  •  1 cup dried cranberries
 
  1. Preheat oven to 350. Grease an 8x4x2 inch loaf pan set aside. In a large bowl, stir together flour, sugar, baking powder, and salt. Stir in orange zest.  
  2. In another bowl, beat eggs with a fork. Stir in milk and yogurt. Add mixture all at once to flour mixture. Stir just until moistened. Fold in cranberries.
  3. Spoon batter into prepared pan and spread evenly. Bake for 50 to 60 minutes, or until a toothpick inserted in the middle comes out clean.
  4. Cool in pan on a wire rack for 10 minutes. Remove from pan and allow to cool completely.
 
 
 
Then, because I couldn't NOT use the avocados that are quickly approaching ick status on my counter, I whipped up some homemade guacamole to go with tonight's Mexican pork chips.  (And by Mexican, I mean grilled with a side of guacamole). YUM!  Today's presentation is "Guac on the half shell".  Lord, I crack myself up!
